White Fish & Coriander With Rice

Healthy Recipe – Dinner

White Fish & Coriander With Rice

The Ingredients You Need
2 white fish fillets
½ cup rice
1 onion, chopped finely
1 tbsp. coconut oil
2 tbsp. cumin powder
1 large carrot, shredded
2 cups chicken stock
1 tbsp. olive oil
1 Zest and juice of a lemon (for zest and juice)
Fresh coriander, chopped
Sea salt and pepper

What To Do:
Preheat the oven to 200°C.
In a pan, brown the onions in oil for 2-3 min.
Add the rice and chicken stock.
Add the cumin and carrots, cook for 2 minutes.
Add salt and pepper
Bring to a boil, cover and simmer for 15 min.
Season the white fish filets with salt and pepper, and brush with olive oil.
Add the lemon zest, half the coriander and the lemon juice.
Put in oven for 10-12 minutes
Serve the fish over the rice,
Add salt and pepper to taste.
