Curried Eggs

If you love curry powder, you will love these curried eggs. Curry powder is a mixture of cumin, coriander, black pepper, chiles, fenugreek, ginger, cinnamon, cloves, cardamom and salt and does a great job of adding Indian flavors to our cooking. You can make as many eggs as you like and store them to have at multiple meals to add some much needed to protein to your fat loss efforts.

Healthy Recipe – Breakfast

The Ingredients You Need
4 large eggs
2 tablespoons nonfat Greek yogurt
1⁄2 teaspoon curry powder (either spicy or
sweet, depending on your taste)
1⁄2 teaspoons chives, plus additional for garnish (optional)
3⁄4 teaspoon black pepper

What To Do:
Hard boil some eggs by placing the eggs in a saucepan, cover with cold water and bring to a boil over high heat. Reduce the heat and continue boiling for 15 minutes. Once the eggs have been hard boiled, transfer to a bowl of very cold water.

Peel the eggs under cold running water (this makes it easier to get the peel off without damaging the egg). Then cut the eggs in half lengthwise. Remove the yolks and place them in a small mixing bowl. Add the yogurt, curry, chives and black pepper and mash together.

Refill each egg half with the yolk mixture and sprinkle with the additional chives, if you’d like.
